On a cold winter morning watching the hounds on a steep hillside the Percy Special is not just a drink, but medicinal. Invented by the 10th Duke of Northumberland, the equal parts of Cherry Brandy and Whisky are still enjoyed by hunting parties to this day. This sweet smelling accord, with powdery notes of soft marzipan next to a hint of dry nuts and sugar lies on a background of oak and a hint of wood smoke. This takes us back to standing at the castle keep swigging a hip flask waiting for the horn to sound.
